Easy Meal Monday: Breakfast Smoothie

Hello, hello! It’s been a few weeks since my last Easy Meal Monday, so here’s a new one comin’ atcha! I know many people don’t bother eating breakfast because they don’t have the time or they’re “not breakfast people” as my mom claims to be, BUT breakfast is so yummy and it’s an important meal. You gotta eat breakfast, especially if it’s as delicious as this smoothie recipe I’m about to give you!

I make all my smoothies in my NutriBullet because I love that you can drink your smoothie in the same container that you make it in (hello easy clean up and less dishes!), and it’s so easy to take with you on the go. Funny side note: 2 years ago I told Eric I wanted a NutriBullet and he was all like “What do we need that for? We have a blender!” Well, my mom bought me one anyway and do you know who uses the NutriBullet every single day? Yep, hubby does.

Anyways, when I was still teaching, I would prepare everything for my smoothie the night before. I would wash all the fruit and hull the strawberries and put it in the fridge in the NutriBullet. So all I had to do in the morning was put the remaining ingredients in, blend it, and I was out the door.

We do a lot of smoothies in our house, but this one is always our go-to breakfast smoothie mainstay.

Breakfast smoothie Ingredients (1 serving):

  • handful of blueberries (around a 1/4 cup)
  • 1 small banana
  • 4-5 medium sized strawberries, hulled
  • 1 tablespoon of vanilla or plain yogurt
  • 1 tablespoon of peanut butter
  • 1 cup of almond milk (or regular milk if you prefer that)
  • handful of spinach leaves or kale (optional)
  • 4-5 ice cubes (if you like yours really cold)

Combine all ingredients in your NutriBullet or blender and blend until smooth. This smoothie is delicious and filling. It’s also a great way to get your kids to eat their fruits (and veggies if you use spinach/kale!). Try it out and let me know what you think!
