The countdown to Fourth of July is on and I’m looking forward to spending the long weekend with my loves. We don’t have any huge plans, maybe a party here, a few fireworks there, and lots of time soaking up summer. I also plan on making a delicious summer staple– fruit pizza.
Everybody has that one go-to dish that is a hit at every party they bring it to. Maybe it’s your famous taco dip or those secret recipe deviled eggs. Maybe you have a chocolate chip cookie that is the bomb dot com. My summer go to is fruit pizza. My mom has been making it for 20 years and it’s one of my favorite desserts ever. It is a crowd pleaser that will have you and everyone else going back for more. It’s also really easy to make, your kids will love helping you, and it’s got fruit so that basically makes it really healthy. 😉
Fruit Pizza Ingredients:
- one roll of sugar cookie dough
- one brick of cream cheese, softened
- 1/2 cup of sugar
- Fruit (Here’s where you can get creative. If you are not doing a Fourth of July themed fruit pizza then you can opt for other fruit like mandarin oranges, kiwi, blackberries, etc)
- 1 cup of sliced strawberries
- 1/2 cup of blueberries
- 1/2 cup of raspberries
- 1 large sliced banana
Fruit Pizza Recipe:
- Lightly flour your pizza stone and slice the cookie dough roll into 1/2 inch slices and lay on pizza stone with sides touching.
- Using your hands, press the cookie dough slices into each other to connect them and form one large cookie.
- Once the dough is spread out, you can lightly use a floured rolling pin to flatten the surface and even out the edges. The edges should be within an inch of the edge of the stone and the cookie should be about 1/4 inch thick.
- Bake the cookie according to the package directions.
- While cookie is baking, mix cream cheese and sugar.
- Once cookie has cooled, very gently use a large knife to loosen the cookie from the stone. Then spread the cream cheese mixture on the cookie evenly.
- This is the fun part– have your kids help you lay the fruit on the cookie in fun designs and patterns.
- Eat and enjoy!
I hope you love this fruit pizza as much I do and I challenge you to bring this to any party and find someone that doesn’t like it. Go ahead, I’ll wait. 🙂
