Holiday Mimosa: Snowy Poinsettia

I’m trying to get all my holiday posts in before all the merriment begins, so here is my last minute, super easy, pretty to look at, amazingly tasty, sure-to-get-you-tipsy-in-a-good-way holiday mimosa. I love any drink with champagne/sparkling wine (I know, I know, real champagne comes from Champagne) and I named this yummy mimosa the Snowy Poinsettia. This drink takes no time at all, but looks super fancy and will wow all your guests. Here’s what you need:

  • 1 bottle (or 3…or 4) of good, but inexpensive champagne/sparkling wine– I like Martini & Rossi’s Asti and that’s what I used here
  • 1 bottle of cranberry juice
  • sugar
  • fresh cranberries
  • sprig of mint
  • toothpicks

Take your champagne flute and wet the rim with water and dip in sugar (hence the ‘snowy’ part). Fill the glass 1/3 of the way with cranberry juice and then fill the rest with champagne. Make a fancy lil drink topper with your toothpicks, mint, and a few cranberries. And toast! Seriously, how easy was that?

My mom and I had a few of these while baking our Christmas cookies and let’s just say that some cookies needed cosmetic surgery. 🙂

    I just bought prosecco and cranberry juice for Christmas morning. I love your idea to add the cranberries and mint springs and rim it with sugar! Much fancier! Especially considering I would just drink out of the bottle if it was socially acceptable!
